Sheet Pan Chicken Sausage, Sweet Potato and Green Beans - An easy weeknight meal with little fuss, showcasing the flavors of fall but delicious all year 'round. Serve over quinoa for an even heartier meal!

If you are a regular here at Foody Schmoody Blog, you are no stranger to the sheet pan meal. I love them, you readers seem to love them, so why not keep the weeknight dinners easy and create some more!?

So let's start out with the chicken sausage. I used the precooked chicken sausage. You can find it right in the refrigerator section. It's easy to work with. I chose the apple flavor for this recipe because I was thinking fall flavors. The apple in the sausage really played well with the sweet potato. It was a good choice.Â
While the oven is preheating, I toss the veggies with olive oil, salt and pepper. I keep it simple with the seasonings when roasting. For me, I find that roasting really brings out the natural flavors in certain veggies and sweet potato is definitely one of those.
After I arranged the veggies on the sheet pan, I sliced the sausage in four pieces. You can keep them whole if you want but I prefer bite sized pieces.Â
Halfway through the cook time, you'll want to flip the veggies and give the sausage a turn too. You should see some good browning action at that point. Brown stuff is good when roasting.Â
If you are making this into a quinoa bowl, don't forget to prepare the quinoa while the sheet pan is roasting.
Once everything is done, simple spoon the quinoa into a bowl and top with a hearty helping of sausage and veggies.

Sheet Pan Chicken Sausage with Sweet Potato and Green Beans
Ingredients
- 4 Chicken Sausage Apple Flavor
- 2 Sweet Potatoes diced small
- 6 oz green beans
- 1 ½ T olive oil
- ½ teaspoon kosher salt
- ÂĽ teaspoon black pepper freshly cracked
Optional
- 2 C cooked quinoa
Instructions
- Preheat oven to 400.
- Toss sweet potatoes and green beans with olive oil, salt and pepper. Arrange on sheet pan.
- Slice chicken sausage into thirds or fourths and arrange on sheet pan with veggies.
- Bake 15 minutes, toss veggies and turn sausage and return to oven for an additional 15 minutes. Remove from oven.
- Serve warm.
For Quinoa Bowl Option
- Place cooked quinoa in each bowl and top with prepared sausage and veggies.
Alternative Options for Sheet Pan Chicken Sausage with Sweet Potato and Green Beans:
- use butternut squash instead of sweet potato
- use asparagus instead of beans
- add sliced red onion to the mix
- serve over rice instead of quinoa
- serve over lightly dressed arugula
