    Pierogi and Sausage Casserole

    The way I would describe this Pierogi and Sausage Casserole is comfort food meets easy weeknight dinner.

    Nothing beats a creamy, cheesy, comforting casserole but sometimes those casserole recipes can be time consuming or require a lot of prep work. The beauty of this casserole recipes is that it uses easy ingredients like frozen pierogis and jarred alfredo sauce.

    Ingredients You'll Need

    Measurements and exact information will be found in the printable recipe card at bottom of page.

    • Frozen Pierogi - There are many varieties to choose. I typically go for a simple potato and cheese and potato cheese and chive variety.
    • Ground Sausage - You can use mild sweet Italian or a spicy one. I also like to use a combo of both. If you can't find ground sausage, simply buy links and remove the casing.
    • Onions - Sweet yellow is what I use but I imagine any yellow or white onion will work well.
    • Alfredo Sauce - This is one of the rare occasions I use a jarred Alfredo. If you prefer to whip up a homemade alfredo, go for it.
    • Shredded Cheese - I like to use a cheddar-jack blend but any shredded cheddar or cheddar blend will work well.

    How to make a Sausage Pierogi Casserole

    • Start by cooking the sausage and onion.
    • Next Place everything in a casserole dish and top with cheese.
    • Bake until bubbly and cheese is melted.

    Serving Suggestions

    Casseroles like this tend to be hearty enough that they don't need a side dish.

    You can add vegetables (green beans, peas or spinach) straight to the casserole if you'd like.

    A side salad is what I prefer to eat alongside my casseroles. A simple green salad makes it feel a bit lighter.

    Recipe Tip: If you have a large, oven-safe skillet, you can turn this into a one pot meal by layering everything right in the skillet.

    Pierogi and Sausage Casserole

    This Pierogi and Sausage Casserole is a comforting, cheesy and creamy casserole but made easy with simple ingredients.

    Ingredients
      

    • 12 frozen pierogies
    • 1 pound ground Italian sausage or sausage removed from casings - use sweet or spicy or a combo of both
    • 1 cup sliced sweet yellow onions optional
    • 15 ounce Alfredo sauce
    • 1 cup shredded cheddar cheese more if desired

    Instructions
     

    • Preheat oven to 350℉.
    • Brown sausage in a non-stick skillet over medium heat, breaking up with wooden spoon as it cooks.  After a few minutes, add onions to pan and continue to cook until onions are soft and sausage is cooked through.  If desired, wipe excess grease from pan. Or when removing sausage and onion mixture use a slotted spoon to leave most of the grease behind.
    • Add frozen pierogies to a 9 x 13 baking dish.  Using a slotted spoon (to leave grease behind) spoon the sausage and onion mixture over the pierogis.  Pour Alfredo sauce over the top.  Cover with foil and bake 25 minutes.
    • After 25 minutes, remove the foil and sprinkle the shredded cheddar cheese over the top.  Return to oven, uncovered and bake an additional 10 minutes until cheese is melted.
      Allow to sit 5 minutes before serving.
