    Baked Onion Dip

    French Onion Dip is a classic party appetizer that never disappoints. Put a bowl of onion dip out with a bowl of chips and it is sure to disappear in minutes.

    But, have you tried a Baked Onion Dip?

    No, now is the time. Game changer!

    The combination of caramelized onions, warm creamy cheeses and the tang of Greek yogurt is simply irresistible.

    This warm gooey dip serves up well for holidays, game nights, movie nights, parties or for snacking during the big game.

    Just in case it isn't obvious from my French Onion Burger, Pizza with Caramelized Onions and Mushrooms and my tutorial on How to Caramelize Onions, I love caramelized onions.

    So, it should be no surprise that I found yet another way to incorporate sweet, jammy caramelized onions into another recipe.

    Ingredients

    • Onions - Sweet Vidalia
    • Cheese - Cream cheese & Gruyere
    • Sour cream
    • Yogurt - Plain Greek yogurt

    You'll notice there is no mayo in this recipe. I'm not a big fan of mayo, so I am not using it.

    TIP: My favorite way to slice onions is using a mandolin slicer. The result is quick and even sized slices.

    Instructions

    Step one is cooking down the onions. This is the most time consuming part.

    Once the onions are soft and golden, stir everything else together. Top with more cheese and bake.

    Serve with baked onion dip warm with chips, crostini, pita chips or even a beer bread or I think this Bacon Cheese Bread would be a good dipper too!

    Recipe notes

    • Cheese is always better when you shred it yourself.  I use a simple box grater and it takes no more than 2 minutes.
    • It is tough to measure the amount of onions, don't worry, using more or less onion will be fine.
    • As with any recipe, salt preference is personal.  Always taste as you go to make sure you like the salt level.  You can always add more but you can't remove.

    Ingredients
      

    • 2 Tablespoon butter
    • 3 medium sweet onions thinly sliced
    • 2 cloves garlic minced
    • ¼ teaspoon thyme dried
    • 2 teaspoons Worcestershire sauce
    • ½ teaspoon salt kosher
    • ¼ teaspoon black pepper freshly cracked/ground
    • ¼ cup beef broth
    • 4 ounce cream cheese softened
    • ½ cup sour cream
    • ¼ cup Greek yogurt plain
    • 1 ½ cup gruyere cheese shredded/grated
    • 1 tablespoon chopped parsley optional/garnish

    Instructions
     

    • Melt butter in a large skillet over medium heat.  Add onions.  Cook, stirring only occasionally to allow the onions to caramelize.  This should take about 30 minutes.
    • Preheat oven to 350 F.  Spray a 9 inch baking dish or pie dish with non-stick spray.
    • Once onions are golden and caramelized, add garlic, thyme, Worcestershire sauce, salt and pepper.  Stir well and cook 5 more minutes.
    • Stir in beef broth.  Increase heat to medium high and bring to a simmer for 2 minutes.  Remove from heat.
    • Stir in softened cream cheese, sour cream, yogurt and 1 C shredded gruyere.
    • Transfer mixture to a prepared baking dish.  Top with remaining cheese. Bake in preheated oven for 12 to 15 minutes until bubbly.
    • Garnish with fresh parsley if desired. Serve warm with sliced bread, pita chips and/or crackers.

    Notes

    If you don't have gruyere or that is not your preference, try white cheddar or if you like a good cheese pull, use mozzarella.
