    Baked Brie Cheese with Cranberries and Walnuts

    This recipe for Baked Brie Cheese with Cranberry, Walnut and Pistachio will be the star appetizer of your holiday season.

    The combination of the warm melty cheese paired with the slightly sweet and tart cranberries against the crunch of the walnuts and pistachios is perfection for both taste and texture.

    Around the holidays I see a lot of brie en croute, which is brie baked inside of puff pastry. While I do love that so much, like so so so much, I find people are always afraid to be the first to cut into it and ruin the beautiful look. So no puff pastry on this baked brie.

    I should mention if you are into the whole puff pastry brie thing, check out my Blueberry Brie Bites. They are so good, easy to make and because they're individual servings, no worries about being the first to cut in.

    📋Ingredient list

    The ingredients are easy to find, especially around the holidays. But if you have a different nut that you prefer, go ahead and change it up. This is pretty versatile.

    • Cheese - brie, whole wheel, preferable a double cream variety
    • Nuts - pistachios & walnuts
    • Fruit - cranberries, fresh
    • Sweetener - honey and sugar
    • Herbs - rosemary, fresh

    🍴Substitutions

    • Herbs - try thyme instead of rosemary
    • Cranberry Mixture - traditional cranberry sauce could be used. Alternatively you can change the flavor profile by changing to a blueberry or strawberry jam.
    • Nuts - pecans and almonds would be a good alternative to the walnuts and you could replace the pistachios with something like pumpkin seeds.

    🔪Preparation of baked brie

    Melt the sugar in a pan over medium heat. Once the sugar melts, stir in the the walnuts. Make sure they're all covered.

    Once the walnuts are coated. Set them aside on a piece of parchment.

    Add the cranberries, honey and rosemary to a saucepan over medium heat. Cook, stirring occasionally until cranberries soften and burst. This step should take about five to seven minutes. Remove from heat.

    Place the brie wheel on a baking dish lined with parchment paper. Top the brie with the cranberry mixture. Bake.

    Just after removing the brie from the oven, drizzle with honey and top with the prepared walnuts and chopped pistachios.

    🍽️Serving suggestions for cranberry baked brie

    • Eat: Crackers, fresh bread, crostini or fruit.

    Am I supposed to eat the brie rind?

    Yes! If you are new to brie, you might confuse it with a thin paper or wrapping but I assure you, the rind of on brie is meant to be eaten!

    Can brie cheese be eaten cold?

    Yes! Brie can be cut up and eaten cold like other cheeses but it only gets that ooey gooey

    Ingredients
      

    • 8 ounce brie cheese round
    • ½ cup cranberries fresh
    • ¼ cup walnuts roughly chopped
    • ¼ cup pistachios roughly chopped
    • 2 tablespoon honey plus extra for drizzling
    • 1 tablespoon fresh rosemary finely chopped
    • ¼ cup sugar granulated

    Instructions
     

    • Preheat the oven to 350 °F . Place the brie in an oven safe dish or baking sheet lined with parchment
    • Place sugar in a small skillet or small saucepan over medium heat. Melt the sugar, stirring often. Once the sugar is melted and golden brown, add in the walnuts and remove from heat. Stir well to coat the walnuts. Transfer the coated walnuts to parchment or silicone baking mat to cool and harden.
    • Place cranberries, honey and rosemary in a small saucepan over medium heat. Cook, stirring occasionally, until cranberries start to burst and get soft. This should take about 5 to 7 minutes. Remove from heat.
    • Spoon the cranberry mixture on top of the brie. Bake in pre-heated oven for 10 to 12 minutes or until the brie feels softened to the touch.
    • Remove brie from oven and drizzle with a little honey. Place the walnut mixture on top of prepared brie and sprinkle with the chopped pistachios to finish. Serve warm.
