    You know that super picky kid of mine? You know, the 7 year old, impossibly picky, I won't even eat a grilled cheese, kid named Josh. Well, that strange eater who won't touch melted cheese or pasta sauce has a major obsession with all things pumpkin. I know. He's weird. I have a love of pumpkin but I'm pretty sure it didn't develop until adulthood.

    Either way, finally having another pumpkin lover in the house means I have an excuse to bake all things delicious with pumpkin!

    Josh has been asking me to make banana bread (one of his faves) lately and I thought I would surprise him with a pumpkin bread instead.  While he was at school the other day I popped out to grab a can of pumpkin and the other essentials I would need.  I went down the dairy aisle to grab some cream to make an icing for the pumpkin bread and noticed the flavored creamers.  Since they immediately caught my eye, I browsed the flavors.  Oh man, each one sounded as tempting as the last.  I started brainstorming and decided that not only would these creamers make my coffee that much better (come on, you guys know me, I need coffee with my treats), but they would add a fun, unique flavor to my pumpkin bread too!

     

    LIGHTBULB MOMENT - REPLACE LIQUID IN RECIPE WITH FLAVORED CREAMER

     

     My original thought was that I would use the creamer to make just my icing, but then I thought, what could be better than pumpkin except a little caramel macchiato mixed with pumpkin.  So, I replaced the liquid in my recipe with the creamer!  I don't know if I'd say it was genius but.....it was genius!

    So, this Caramel Macchiato Pumpkin Bread, is it a dessert or a breakfast?

    I say it's whatever you want it to be. 

     

    Here's what I do with it: 

    I ship the kids off to school. Then, I come home and turn on a podcast or an audiobook, cut myself a nice big slab of the Caramel Macchiato Pumpkin Bread and place it right next to my coffee.  I savor every bite, every sip, alone.  Everything tastes better when there is peace and calmness in the house.  I take my time and indulge in the coffee and the bread.  I know this time is short, as my daughter is only at school for 2.5 hours.  And, no, I'm not being totally selfish.  I get a piece on a plate waiting for when they get home too.

    FUN FACT - See that raggedy looking mug in my picture? That was the VERY first gift my husband ever gave me, back when we were dating. That mug is over 12 years old (hence all the discoloration and lack of wording on it) and I still drink my coffee out of it every day!

    Ingredients
      

    • non-stick spray
    • 2 C flour
    • 1 teaspoon baking soda
    • 1 teaspoon baking powder
    • ½ teaspoon salt
    • 1 teaspoon cinnamon
    • ½ teaspoon nutmeg
    • ÂĽ teaspoon ground cloves
    • ÂĽ teaspoon ground allspice
    • 2 eggs
    • ½ C oil
    • 1 ½ C sugar granulated
    • ½ C International Delight® Caramel Macchiato Creamer
    • 1 teaspoon vanilla extract
    • 15 oz pure pumpkin

    Icing

    • 1 T butter melted
    • 1 C confectioner's sugar
    • 3 T International Delight® Caramel Macchiato Creamer

    Instructions
     

    • Spray loaf pan w/ non stick spray
    • Whisk together first 8 ingredients in a bowl. Set aside.
    • In a separate bowl mix together eggs, oil, sugar, creamer and vanilla. Once smooth, mix in pumpkin.
    • Fold dry ingredients into wet.
    • Pour mixture into loaf pan and bake at 350 for 1 hr 10 min.
    • Allow to cool slightly in pan for a few minutes and then turn out onto cooling rack to finish cooling.
    • In a bowl whisk together icing ingredients.
    • Drizzle over bread.

      I've started using ID creamer for all my baking and everything is so much better. We always run out of creamer so the larger sizes are perfect for us too #client
