    Chicken Broccoli Alfredo Skillet Dinner - 25 minutes is all you need to get this family friendly, one pot meal on the table.  This skillet dinner is perfect for a weeknight meal.

    Chicken Broccoli Alfredo Skillet Dinner

     

    I know I should be craving healthy salads since the sun is finally shining.

    But I'm not.

    I mean, give me some credit, I did make a bomb salad the other day, remember?  My Spring Salad with Chicken & Berries was awesome but all this week I've been craving Alfredo sauce.  I know, weird right?  Not exactly the season.  Oh well, consider me a non-conformist.

    Naturally, my first thought with Alfredo sauce would be to make an Alfredo pasta.  The problem with that is I already had a pasta dish on the menu.  I try to stick with only one pasta dish per week if I can.  Since One Pot Pasta with Chicken Sausage was being made, I had to think outside the box.  Okay, not too far outside the box.  Rice.  I came up with rice.  That's about as creative as I have been feeling.

    Obviously, I wanted this to be a one pot meal.  You know how I love a one potter.  Plus, with one kid on the mend from the stomach bug and me still dealing with these nasty sinus issues, I just don't have the energy to exert on dishes.  Yup, that's why.  I'm sticking to that story.

    Okay so on to the recipe.  I used instant rice.  Go ahead and balk at me.  It's as bad as when I used pre-cooked chicken, right?  Whatevs, it gets the job done in a pinch.  There is a time and a place for regular rice but a busy weeknight is neither of those.

    Back to the recipe.  Brown up some simply seasoned chicken, toss in rice, butter, milk and broth and cook that for a few minutes.  Next you stir in some steamed broccoli and cheese.  Oh and then you are done.  Yup, done.  Eat.  Enjoy.

    Quick note about the broccoli.  I have been using a One Pot Meals HERE(the same one) for about 15 years now.  The one I got was from Pampered Chef.  If you are in the market for a microwave steamer here are a few I found on Amazon that look good.  Yes, I did the searching and research for you - you are welcome.

    Ingredients
      

    • 1 T olive oil
    • .5 lb boneless chicken breast diced
    • ½ teaspoon salt
    • ¼ teaspoon black pepper
    • ¼ teaspoon garlic powder
    • 1 ½ C chicken broth or vegetable broth
    • ½ C milk whole
    • 1 T butter
    • 1 C instant rice
    • 2 C broccoli florets
    • 1 C mozzarella cheese shredded

    Instructions
     

    • Heat oil in a skillet over medium/high heat. Season chicken with salt, pepper and garlic powder. Add seasoned chicken to heated skillet. Cook until browned on all sides, stirring occasionally, about 8 minutes total.
    • Pour milk and broth into skillet. Bring just to a boil. Add butter and rice. Bring back up to just a boil, cover and reduce heat to low to simmer 5 minutes.
    • Meanwhile, place broccoli and ¼ C water in a micro-steamer or other microwavable container with a cover that can be vented and cook 1 min 45 sec, just to steam. Drain water.
    • Stir broccoli into rice/chicken mixture. Stir in cheese. Cook 2 more minutes over low heat, uncovered. Enjoy
