    Chicken Curry Meatballs

    Let me just start off by saying I know nothing (seriously, nothing) about Indian food/flavors.  I know, that's probably not the best way for me to sell you on this recipe for Chicken Curry Meatballs, right?  There are so many powders and leaves etc. that I'm just not familiar with.  I'm intrigued though.

    Chicken Curry Meatballs

    I've had a little tin of curry powder floating around (unopened) in my cabinet for months.  I haven't a clue why I bought it but I'm glad I did because these Chicken Curry Meatballs came out freakin' amazing.   I used regular things I had in my cabinet, like cinnamon, nutmeg and coriander.  I honestly don't know if using tomatoes is a normal thing for Indian cooking, or if I can even categorize this dish as Indian cuisine.  Is anything with curry considered Indian cuisine?  Seriously, I should do this research before I sit down to share with you.  My bad.  I'm more of a cooker, not so much a researcher.  If you could look into that and report back, it would be awesome.  Thanks.

    Chicken Curry Meatballs

     

    Honestly, I hadn't had high hopes for this.  I know, there I go really selling the recipe, lol. It was a total gamble, I kind of just threw it all together, closed my eyes and hoped for the best. Just know, since I made this two weeks ago, I have recreated the "sauce" 3 times and used it for braising various other things, chicken thighs being one.

    I served the meatballs over rice, plain old white rice.  Okay, if I'm honest, it was actually minute rice.  I get lazy when it comes to rice sometimes.  It doesn't matter anyway, because once the sauce seeps into the rice, it will transform your crappy rice into the best rice you've ever eaten.  Maybe that's a stretch, but it will be awesome.  Trust me.  So let yourself get lazy with the rice.  Who cares, I won't tell.

    Chicken Curry Meatballs

    You don't have to use chicken in the meatballs either, use whatever ground meat you've got.  Turkey would be good, or even go ground beef.  Heck make them with pork if that's your thing.  You should know by now, I'm all about the versatility.

    Chicken Curry Meatballs

    Ingredients
      

    Meatballs

    • 1 lb ground chicken
    • ÂĽ teaspoon cinnamon
    • ÂĽ teaspoon coriander
    • ½ teaspoon curry powder
    • 1 teaspoon parsley flakes
    • ÂĽ teaspoon salt
    • 1 egg
    • ½ C panko crumbs
    • 2 T olive oil

    Sauce

    • ½ onion yellow, diced
    • 2 garlic cloves minced
    • 1 carrot diced small
    • 1 T curry powder
    • 1 teaspoon coriander
    • ½ teaspoon nutmeg
    • 28 oz can diced tomatoes

    Instructions
     

    • Combine all meatball ingredients, except olive oil, and roll into meatballs (about 16 meatballs yield).
    • Heat oil in large skillet over medium/high heat. Brown meatballs (in batches) on all sides. When all meatballs are browned, set aside.
    • Return pan to stovetop over medium heat. If all oil is gone, add 1 T and heat. Add onion and carrot. Cook 3-4 minutes, until starting to soften. Add garlic and spices, stir and cook 1 minute. Add tomatoes and stir well. Add meatballs back to pan, in sauce. Simmer 15-20 minutes, until meatballs are cooked through.
    • Serve over white or jasmine rice.

      I also have zero experience when it comes to INdian flavors. But I do love these meatballs and would definitely try them!

      That happens to me. I have tons or jars of a spice which I totally forget about. When I find it (finally), it opens a world of possibility. These meatballs look sooo tasty!
