I hope you all had a great weekend! We had beautiful weather! Yay! The kids got to get in the pool for the first time this season. I am too much of a wimp to get in yet. The water temperature has only hit 66 and I generally don't dip in until it's 80. My kids are much braver than I in that department.
I'm trying to grill more, now that the weather is allowing. Don't you just love cooking outdoors?
Ask me two years ago to make a Salsa Verde and I would have no clue what you were talking about. I had never heard of a tomatillo. This is another one of those things that I was introduced to when we were part of a CSA (also how I was introduced to Kohlrabi, which is awesome). I had no clue what the little balls covered in a weird sticky paper were but I was determined to find out. I, of course, did what I do with all things I'm curious about. I took it to Google.
If you aren't familiar with tomatillos, you should be. Not only are they delicious, they can be eaten raw or cooked, in salsa and sauces but they are also super cheap! And you know me, that's just my style. The very first thing I ever made with tomatillos is a Corn, Black Bean & Tomatillo Salsa. You should totally check out this recipe, but please forgive the photo, I didn't know what the heck I was doing back then.
This Lime Marinated Grilled Chicken with Salsa Verde is pretty much one of the freshest tasting pieces of chicken I have ever served. The lime gives it the burst of flavor that I am looking for in the warm weather. Plus, the vibrant green color is super pretty!
Here are a few notes about the Lime Marinated Grilled Chicken with Salsa Verde recipe:
- The longer you can keep the chicken marinating, the better. I'd say, minimum 4 hours but it's best to marinate over night.
- When making the salsa verde, I chose to oven roast the tomatillos, but feel free to pan roast them if that's your thing.
- If you are new to tomatillos, you want to make sure you remove the paper prior to roasting and also wash them good to remove all that sticky residue.
- You don't have to use the lime marinade if you don't want. The salsa verde would be a great topping to plain old grilled chicken too, I just chose to give it some extra oomph
- This salsa verde recipe also is amazing own it's own for dipping chips
Okay so that is my raving review of tomatillos and salsa verde, well, my salsa verde anyway.

Lime Marinated Grilled Chicken with Salsa Verde
Ingredients
For the Marinade:
- 4 boneless skinless chicken breasts
- 2 limes juiced
- ½ C olive oil
- 3 T honey
- 2 cloves garlic minced
- ½ t salt
- â…› t freshly ground black pepper
For the Salsa Verde
- 10 to matillos halved
- 1 sweet onion chopped
- ½ C fresh cilantro chopped
- ½ lime juiced
- 1 jalapeno pepper (seeded for less heat or leave some seeds if you prefer the heat) chopped
- â…›-1/4 t salt to taste
Instructions
Prepare the marinade:
- Whisk together lime juice, olive oil, honey, garlic, salt and pepper. Place chicken in a resealable plastic bag and pour marinade over chicken. Seal bag and massage chicken and marinade to make sure chicken is even covered. Refrigerate 4-12 hours.
Prepare the Salsa Verde:
- Preheat oven to 450. Place tomatillos, cut side down, on a non stick baking sheet. Roast 5-10 minutes, until softened.
- Place roasted tomatillos, onion, cilantro, lime juice, jalapeno and salt in a blender or food processor. Process until smooth.
Put it all together:
- Preheat grill to medium/low heat. Place marinated chicken breasts on grill and cook about 6-8 minutes per side, or until internal temperature reaches 165.
- Top grilled chicken with Salsa Verde and serve over rice, couscous or quinoa.
