    Pineapple Cilantro Rice

    Finally, we got some spring weather last week.  Actually, it felt more like summer weather, we hit temps in the 80s.  Don't worry, we dropped back down into the low fifties, maybe even into the forties, so I'm not getting too excited yet.  This back and forth with the weather makes me worry about my garden, but I guess since it's all in the ground already, all I can do is cross my fingers.

    Anyway, that really has nothing to do with my recipe for Pineapple Cilantro Rice, other than the fact that this is a dish I plan on making all summer long.  I love when a plain old stand by can be refreshed and livened up with just one or two added fresh ingredients.

     I've been feeling a little uninspired lately in the kitchen.  It always happens when we are in between seasons.  I've been doing a lot of browsing online, on Pinterest of course and in cooking magazines.  It's funny, sometimes we get our inspiration in the strangest places.  Does this happen to you?  The supermarket flyers came in the mail last week and there was a special coupon insert from Stop and Shop.  When I opened it to check out the coupons there was a bowl of a bright, yummy looking rice.  I knew, right then, that I was making this rice!  Inspiration was found, hooray!

    All was fine and dandy until the day I wanted to cook it.  I knew this would pair well with grilled chicken so I marinated my chicken in lemon, olive oil and garlic.  While the grill was heating up, I pulled out all my ingredients that I remembered seeing in the coupon booklet but when I glanced over the booklet, there was no recipe.  Seriously, they put up the picture and mention a few ingredients but DON'T PRINT THE RECIPE!  That would be like me just listing ingredients for you each day and saying just do your thing!

    Anyway, I made do with what I had and it turned out great!  I mean, there are only a few ingredients so chances are it was going to be easy enough to pull together.  But, I, unlike Stop and Shop am willing to share my recipe with you.

    Pineapple Cilantro Rice

    Ingredients
      

    • 1 C uncooked white rice
    • 1 ¾ C water
    • ¼ C fresh pineapple juice
    • 2 T butter
    • 1 ½ C fresh pineapple cut into chunks
    • 1 lime juiced
    • ¼ C freshly chopped cilantro
    • Salt and pepper to taste

    Instructions
     

    • Combine water and pineapple juice in saucepan. Bring to a boil, add rice and simmer, covered, 20 minutes.
    • When the rice is cooked, add butter and stir well, to make sure it melts and evenly coats the rice. Stir in lime juice, pineapple and cilantro. Season with salt and pepper if desired.
    • Serve immediately.

      I'd never think to try cilantro rice with pineapple. But I love this! It will definitely be a welcomed addition to our table. 🙂
