    Chicken and Stuffing Casserole

    By using a few simple shortcuts, I get this belly-warming chicken and stuffing casserole ready and on the table in under an hour.

    This easy family dinner gives Thanksgiving dinner vibes, so no matter the time of year, if you are craving Thanksgiving dinner, try this casserole!

    To make this a complete meal, serve with a vegetable, or add a vegetable straight into the casserole.

    This chicken and gravy recipe is one that I've been preparing for well over 20 years and all the kids love it. The kids loving it is the true test.

    This recipe doesn't just work with chicken. Prepare this casserole with leftover turkey instead of chicken. This is a great dish prepared with Thanksgiving leftovers!

    Chicken stuffing casserole ingredients

    This casserole uses super simple ingredients and most of them can be tailored to your own personal preference.

    • Chicken - leftover roasted chicken, rotisserie chicken or store bought prepared chicken
    • Gravy - jar or homemade gravy works
    • Stuffing - instant stuffing or leftover stuffing
    • Vegetable - Onion & Celery
    • Garlic
    • Butter
    • Salt & Pepper
    • Optional: Green beans, peas and/or carrots

    Chicken Stuffing Casserole Assembly

    To assemble the chicken stuffing casserole, start by softening the onion and the celery in a skillet.

    Then, stir in the chicken and the gravy.

    Transfer it to an baking dish or if you're using an oven-safe pan, keep it in there.

    Add the prepared stuffing on top and bake it. That's it.

    Serving suggestion: This chicken, gravy and stuffing casserole goes great with a glob of mashed potatoes on the side and a green vegetable like my favorite Garlic Green Beans.

    Ingredients
      

    • 2 Tablespoons butter
    • 1 Cup diced sweet or yellow onion
    • 2 ribs celery diced
    • ½ teaspoon salt be careful with the salt if your gravy or stuffing is salty
    • ¼ teaspoon black pepper
    • 2 Cups chicken cooked & chopped (rotisserie works well)
    • 18 ounces chicken gravy brown gravy or turkey gravy also okay
    • 2 cups prepared stuffing

    Instructions
     

    • Preheat oven to 350.
    • Melt butter in skillet over medium heat. Once butter is melted add onion and celery to skillet. Cook, stirring occasionally until just starting to soften, about 5-6 minutes. Season with salt and pepper. Stir in chicken and gravy. Continue to cook, just until warm; about 2-3 minutes.
    • Spray an 8x8 or 9x9 baking dish with non-stick spray or rub with butter. Pour chicken mixture into baking dish. Top with stuffing.
    • Cover with foil and bake 20 minutes. Remove foil and bake an additional 10-15 minutes uncovered.
    • Serve warm with mashed potatoes, risotto, rice etc.

    Notes

    • Add vegetables - stir frozen mixed vegetables in before baking or whatever your favorite vegetable is. Carrots would work well as would green beans or peas.
    • Make it richer - Stir a can of cream of chicken soup together with the gravy for a richer result.
    • Use leftovers - This recipe also works well with Thanksgiving leftovers (turkey, stuffing & gravy.
    • Serving suggestions: Serve with mashed potatoes, creamy rice or risotto and a side salad or vegetable.

      I had some left-over turkey & dressing, so made this casserole with that. I didn’t have any gravy left, so used a can of cream of mushroom soup & made up the difference with milk & some chicken bouillon powder. It was very tasty - good “comfort food”. Would try it again but using the gravy as in the posted recipe. I debated adding some sauteed mushrooms, too, but I had added chopped mushrooms to my turkey dressing.

      I made this last night, and it is delicious. Best casserole recipe I've found in a while. It's so easy, and you can add anything to it you want. I added a little more gravy, just because I love gravy. And I added some frozen peas, just because I love peas. But you certainly don't need to add anything if you don't want to. This will become a regular dish in my house!

      Comfort food for sure! Our powers been out for hours. I was freeeezing in here and as soon as it was restored, I threw this together but doubled it adding canned veggies, like corn, peas etc and it’s cooking now. At least if the wind takes our power again, dinner will be ready!
