    Easy Easter Peeps Cake

    This easy Easter Peeps Cake is fun, festive and perfect for the Easter Dessert Table!

    Bake your own cake from scratch, from a box or buy a store-made cake and just embellish it! This is a great way to hack a store bought cake!

    Love them or hate them, Easter isn't Easter without Marshmallow Peeps! If you don't love to just snack on them, why not incorporate them into yummy desserts like this Easter Peeps Chocolate Tart or these Peeps Whoopie Pies and now this Peeps Cake!

    This dessert is perfect for those, like me, who make the Easter appetizers (usually Tortellini Skewers), the Easter Ham and dessert! I spend so much time on my other dishes, and have little patience for dessert so this easy cheat cake is just what I like to serve for Easter.

    This is absolutely the easiest cake I have ever decorated so don't be intimidated if cake decorating isn't your thing. No piping involved!

    You don't even have to frost it neatly because it will be covered by the festive green coconut "grass". I just slather it on.

    Instructions

    1. Bake a cake in a 9 x 13 cake / baking pan OR buy a cake!
    2. Tint your frosting and coconut with green food coloring.
    3. Frost the cake.
    4. Add marshmallow Peeps around the border of the cake, pushing into frosting to help them stick.
    5. Sprinkle the top of the cake with coconut to create the grass effect.
    6. I like to embellish with jelly beans but you could but mini eggs or any other Easter candy you prefer.

    Look how messy my frosting is. There is no need to spend time making it neat, nobody will see it.

    That's it. Do you believe how easy that is? I usually spend time molding a bunny, or piping a cute design, but I have to admit this is way easier and I even think way cuter!

    Ingredients
      

    • Cake mix + ingredients required on box any flavor
    • 1 can white frosting I used vanilla
    • Green food coloring I used Wilton gel, leaf green
    • 2 C coconut flakes
    • 2 packages Peeps
    • Jelly Beans or Candy Eggs for decorating

    Instructions
     

    • Bake cake according to box. Cool completely.
    • Color your coconut and frosting with food coloring. A few drops to each should be enough.
    • Frost cake with frosting, making sure to frost sides too, so the Peeps will stick.
    • Line peeps up around edges of cake, pushing against cake to ensure they will stick to the frosting.
    • Sprinkle coconut over top to create "grass".
    • Add a few jelly beans or candy eggs to decorate the top.

        I usually use unsweetened if I'm using a really sweet frosting. Either one works, it just depends on your level of sweetness you'd like the cake to have.
