    Layered Grilled Chicken Chopped Salad - This chopped salad comes together with marinated chicken and vegetables, which are both grilled. It is served, layered in a glass bowl for a unique salad presentation.

    Are you guys sick of my salads yet?  I hope not!  Because even though I shared 52 Summer Salads last week, I went ahead and created this new salad this weekend!  I'm trying to be good.  I got a fit bit and I am really trying to be healthy.  Kind of.

    The great and different thing about this salad is that not only is the chicken grilled but so are the vegetables.  I'm new to grilling veggies but I absolutely fell in love with them when I experimented with my Grilled Vegetable & Prosciutto Pasta last week.  Was that last week?  Maybe the week before, it's all blurring together at this point.

    Anyway, all you've got to do with this, is marinate the chicken and the veggies, grill them up chop them and toss them into a bowl in layers.  Easy, right?  Plus, people tend to love things in layered glass bowls.  I'm not sure why, but I swear they do.  Don't believe me?  I have been making taco salad for as long as I can remember.  Last summer, I turn it into a Layered Taco Salad and ta-dah, everyone ooh's and ahhh's over it.  I mean, it IS awesome, but I know it's the layering that got it all the attention.  I use a trifle bowl but any large glass bowl will do.

    Now let me tell you about the marinade.  With all of the fancy marinades I've tried in my life, one of my favorites is kind of embarrassing for a food blogger to admit.....bottled Italian Dressing.  I know! I can't help it!  Stop judging!  It's so easy and my gosh, it's just plain old great!  When I marinate with Italian Dressing, I always get a bold one like Robusto or something similar to that because it's got tons of flavor.

    I'll admit, I made a misstep in this salad.  I generally really like celery chopped up in my salad so I threw a layer of celery in there.  It didn't belong.  When I make this again in the future I would not include it and I'm actually omitting it out of the recipe for you.  But I felt like I had to admit my wrong doing!

    When all is said and done I served the salad with the same Italian dressing at the table.  You could use a creamy dressing if you wanted but because it already had so much robust flavor, I hardly needed any dressing at all.

    Ingredients
      

    • 1 lb boneless chicken breasts or tenders
    • 4 carrots halved lengthwise
    • 1 red onion quartered
    • 2 zucchini quartered lengthwise
    • 2 ears corn shucked and wrapped in foil
    • 1 cucumber chopped
    • 2 C Italian dressing robust flavor, divided
    • 1 head iceberg lettuce chopped

    Instructions
     

    • Place chicken in a large re-sealable plastic bag with 1 C dressing. Place carrots, onion and zucchini in another large re-sealable plastic bag with remaining 1 C dressing. Place both bags in refrigerator and marinate 4 hours.
    • Preheat grill to medium heat.
    • Place wrapped corn on grill and cook, turning often about 15 minutes. Set aside to cool. When cool enough to handle, cut the kernels from cob. Set aside.
    • Place chicken and vegetables on grill over medium heat, discard marinade. Cook until vegetables are tender and chicken is cooked through, about 10-12 minutes. Remove from grill and place on cutting board. Chop chicken and vegetables into bite sized pieces.
    • Layer salad in a large glass bowl or trifle bowlin this order: lettuce, onions, cucumber, corn, carroty and zucchini and finally top with the chicken.

      Hmmm... my partner doesn't like salad but he loves grilled chicken so this might do the trick! My fave salad dressing happens to come in a bottle too - it's a Japanese yuzu and soya sauce dressing. If you find it where you live, you must try it because it has a tangy flavour and is great.
