This Leftover Turkey Hash is the perfect meal to use up leftover Thanksgiving turkey or Christmas Turkey.
Perfect for breakfast with a few eggs on top (or on the side), brunch or even dinner.
We all have our usual go-to meals we serve up in the days after Thanksgiving. I do too.
Some of our favorites are Turkey Apple Panini, Leftover Thanksgiving Sliders and Leftover Thanksgiving Casserole. But this year, I'm adding Leftover Turkey Hash to my menu.
This recipe also works with other leftovers. So far I made this hash using leftover pork tenderloin, sausage and chicken.
I like to top my breakfast hash with a runny egg. It isn't for everyone. My husband is one who doesn't appreciate the beauty of a runny egg.
Another great topping idea would be to drizzle some of your leftover Thanksgiving Gravy on the top!
TIP: If you want this to be ready even quicker, you could microwave your potatoes. I have seen a lot of hash recipes that start with this. I take the few extra minutes and skip the microwave. You do you.
To finish off the Leftover Turkey Hash I garnish with either chopped green onions or chopped parsley. I've done it both ways and it really just depends on what I have on hand. I always like a pop of green to brighten up my meals.

Leftover Turkey Hash
Ingredients
- 1 ½ T vegetable oil or corn oil
- 1 small onion diced
- 2 stalks celery diced
- 1 clove garlic minced or diced
- 2 large potatoes diced
- 2 C leftover turkey chopped
- ½ teaspoon salt kosher is what I use
- ¼ teaspoon coarse ground pepper
- ⅔ C chicken broth
- 1 C shredded cheddar cheese I use a cheddar jack blend
Instructions
- Heat oil in a large skillet over medium heat. Add onion and celery and cook just until soft.
- Add diced potatoes to the skillet, trying to keep in a single layer. Allow potatoes to brown without stirring (you want a good brown crust you won't get by stirring), about 5 minutes.
- Stir potatoes and cook another 5 minutes, getting the other side(s) to brown. Stir in garlic, salt, pepper and turkey. Cook, stirring for 1 minute. Add ⅓ C broth, reduce heat to a simmer. Once liquid has cooked out, add remaining broth. Cook about 5-10 more minutes until potatoes are fork tender.
- Sprinkle cheese over top and cook just until cheese is melted.
- If desired, serve topped with over easy eggs.
