These Sweet Summer Corn Recipes will have you wishing it were summer all year long.

Today, I'm happy to share all the tasty corn recipes I've tried and/or want to try.
I've separated the recipes by type salads, soups, dips etc. There are a few recipes like my own bacon corn grilled cheese that didn't quite fit in their own category so I added all those recipes towards the bottom. Be sure to scroll all the way down so you don't miss anything delicious!

CORN ON THE COB
Instant Pot Corn on the Cob
Ingredients
- 5 ears corn on the cob shucked and silks removed
- 1 C water
Instructions
- Place water in inner pot. Place rack over water and place corn on rack.
- Cover and seal instant pot. Set to 3 minutes using the steam function. When timer ends, use the valve for a quick release.
- Top with desired toppings (ie: butter, salt, seasonings).

Gnocchi Corn Chowder
Ingredients
- 6 slices bacon diced
- 3 carrots diced
- 3 celery stalks diced
- 1 onion diced
- ½ teaspoon fresh rosemary
- 1 teaspoon fresh thyme
- 6 C vegetable broth
- 14.5 oz frozen gnocchi
- 1 C heavy cream
- 1 15.25 can sweet whole kernel corn, drained
- 1 14.75 can cream style corn
- Salt and pepper to taste
Instructions
- Place the diced bacon in a large pot and cook until bacon is crispy. Remove the bacon with a slotted spoon and set aside. Return pot with bacon rendering back to burner over medium/high heat and add onion, carrot and celery. Cook until vegetables are just starting to soften, about 5 minutes. Add rosemary and thyme.
- Add broth and to a boil, add gnocchi and simmer about 10 minutes. Add cream and both cans of corn and simmer an additional 10 minutes.
- Taste and add salt and pepper as desired.
- Serve in bowls, garnished with bacon.
Roasted Corn Chowder
Ingredients
- 4 ears of corn fresh, in husks
- 4 slices bacon
- 1 small onion diced
- 3 carrots chopped
- 3 celery stalks chopped
- ¼ teaspoon thyme
- ¼ teaspoon salt
- ⅛ teaspoon black pepper fresh ground
- 2 potatoes diced
- 2 C chicken broth
- 2 ½ C milk divided
- ¼ C flour
- Optional: chopped scallions/green onions for garnish
Instructions
- Preheat oven to 350.
- When oven is preheated, add corn (still in husks) directly on to the oven grates. Roast 30 minutes. Set aside. Once cool enough to handle, peel back husks and silks (they will come away easily after roasting). Hold each ear of corn upright resting on cutting board or shallow bowl and run knife down the sides of ear to remove kernels. Set kernels aside and discard ears.
- Chop bacon into 1" pieces. Add bacon to large pot, over medium/high heat and cook until crispy (5-8 min). Using a slotted spoon, remove cooked bacon and place on paper towels to drain (keep rendered fat in pan).
- Return pot back to heat (w/ rendered fat), add onion, carrot and celery. Season with thyme, salt and pepper. Cook until just soft (about 5 minutes), stirring occasionally.
- Add potatoes and broth to pot. Bring to a boil then reduce heat and simmer until potatoes are fork tender.
- Stir in 1 ½ C milk and continue to simmer.
- In a small bowl, whisk together flour and remaining milk. Add milk mixture to pot and stir well.
- Add corn kernels to pot. Check for seasoning, adding salt, pepper and/or thyme as desired.
- Simmer 10 minutes.
- Serve warm.

Easy Cornbread Pudding

Easy Grilled Vegetable Kabobs (+5 Marinades)
Sweet Corn Bacon Grilled Cheese
Ingredients
- 4 slices bread
- 1 T melted butter
- 4 slices bacon , cooked and roughly chopped
- 1 corn on the cob , cooked
- 2 scallions , sliced
- 2 oz Colby-Jack Cheese , cut into 6 thin slices
Instructions
- Preheat non-stick skillet over medium heat.
- Brush 1 side of each slice of bread with melted butter. Place buttered side of a slice of bread in skillet. Add 3 slices of cheese, half of the bacon, half the corn and scallions and 3 more slices of cheese and then top with slice of bread (buttered side up).
- Cook over medium heat 3-4 minutes, just until browned. Carefully flip sandwich over and continue cooking until cheese is melted and bread is golden brown.
- Serve immediately.
Roasted Corn and Mango Relish
Ingredients
- 2 ears Corn on the cob husks still on
- 2 Mangoes peeled and finely diced
- 1 small Red onion finely diced
- 1 Jalapeno seeds removed, finely diced
- Juice of 1 Lime
- 2 T Cilantro freshly chopped
- ¼-1/2 teaspoon salt or to taste
Instructions
- Preheat oven to 350.
- Place corn (still in husks) directly on grates in oven and roast for 30 minutes. Allow to cool before removing silks and husks.
- Carefully, run a sharp knife down the sides of the cob to remove the corn kernels. Place in bowl.
- Add mango, red onion, jalapeno, lime juice, cilantro and salt (start with less salt and add more to taste as needed). Stir to combine. Refrigerate until needed.
- I also enjoyed this straight out of the bowl with tortilla chips.
Notes
I used as a relish on top of Jalapeno flavored Chicken Sausage.
