    Savory Zucchini Bread

    This savory zucchini bread is full of all things savory so if you like bacon, garlic and cheese, you'll love this summer quick bread.

    Don't like bacon? Leave it out. You know me, I'm all about making it how you like it. change up the cheese to your favorite too.

    Whether you grow your own zucchini or not, there is always fresh zucchini in abundance in the summer.

    I grow it myself, mostly for the zucchini flowers. My absolute favorite summertime savory treat is zucchini pancakes / fritters.

    My other must-makes every summer with zucchini are chocolate chip zucchini bread, air fryer zucchini fries, pan-fried zucchini fries and of course, this savory zucchini bread.

    If you prefer your zucchini bread on the sweeter side, this Pineapple Zucchini Bread is a great choice for you.

    I love a savory version of a typically sweet recipe like this. Another good one to try is this recipe for Cheese Scones. I'd much prefer that than a fruity scone.

    While sweet zucchini recipes are great, as you know, I'm a savory girl at heart. So I have loaded this zucchini bread with bacon, garlic and cheese. Can't beat that combo.

    Savory Zucchini Bread

    A savory version of zucchini bread.  This version is loaded with bacon & cheese!

    Ingredients
      

    • 3 Cup flour , all purpose
    • 4 teaspoon baking powder
    • ½ teaspoon salt
    • ½ teaspoon baking soda
    • 2 large eggs
    • 1 Cup milk (I used 1%)
    • 3 tablespoon butter , melted
    • 3 garlic cloves , minced
    • 1 Cup shredded or grated zucchini
    • 2 green onions , chopped
    • 1 Cup cheddar cheese , divided (I used a cheddar blend)
    • 4 -5 slices bacon , cooked and roughly chopped

    Instructions
     

    • Preheat oven to 350.
    • Spray a 9x5 loaf pan with non-stick spray. Set aside.
    • In a large bowl, whisk together flour, baking powder, salt and baking soda. Set aside. In a separate bowl, whisk together eggs, melted butter, milk and garlic. Stir in the zucchini and green onions.
    • Stir the wet mixture into the dry mixture, just until combined. Fold in Âľ C cheese and half of the bacon.
    • Pour mixture into loaf pan. Top with remaining bacon & cheese. Bake 50 minutes.

    Notes

    • Can also be baked in a round cake pan
    • Bacon can be omitted
    • Cheese can be swapped for your favorite variety
    • Add in other fresh herbs to change the flavors a bit

      I love zucchini! It's such a versatile vegetable, isn't it? I've been meaning on making a zucchini bread for ages but would have not thought myself of adding bacon in as well. What a great idea 🙂
