    Italian Sausage Soup

    This hearty Italian Sausage Soup is easy to make and super comforting for those chilly fall evenings or winter nights.

    Using a combination of sweet and hot Italian sausage this soup is warming to the palette and the soul!

    The beauty of Italian sausage soup recipes is that the sausage has so much flavor, you don't need to add much to the dish. Most of the flavor comes directly from the seasonings in the sausage.

    I have shared other preparations of sausage soup. I've got an Instant Pot Sausage Soup with Orzo and an Instant Pot Sausage Soup with Tortellini but this recipe is for those who don't want to rely on the gadgets. This is an easy stovetop Sausage Soup!

    Looking for other ways to serve Italian sausage besides soup? I like to make air fryer Italian sausage to serve in rolls. You can even make Air Fryer Peppers and Onions to go with them.

    📋Ingredients needed

    For a complete list and measurements, see the printable recipe card at the bottom of post.

    • Sausage - Use bulk sausage or links. A combination of sweet and hot Italian is preferred. Casings removed if using links.
    • Vegetables - Carrots, Onion, Garlic & Celery (add the leaves for even more flavor and a pop of color)
    • Pantry items -
      • Vegetable stock. You can also try chicken but there's something about the flavor of the vegetable that just goes well with the soup.
      • Tomato - Canned tomato sauce and canned diced tomatoes (no need to drain).
      • Sherry - Optional but suggested.
      • Noodles - egg noodles cook up quickest but you could also use another small pasta such as orzo, macaroni etc.

    This soup comes together in a few simple steps.

    1. Brown the sausage and then add the vegetables to soften.
    2. Add the sherry and allow it to reduce.
    3. Stir in everything else except the noodles. Simmer.
    4. Add noodles and continue to simmer until noodles are tender.

    A kitchen tool that I love to use when cooking Italian sausage or ground beef is a meat chopper. I used to snub my nose at them and then one was gifted to me and I have to admit, it is a GREAT tool!

    💭Expert tip

    If you do not plan to serve the sausage soup right away, do not cook the noodles in the soup. The longer noodles sit in soup, the more liquid they will absorb, causing the noodles to become mushy. If serving at a later time, prepare the noodles separately and stir into soup when serving.

    🍽️Variations and additions

    My Italian sausage soup is great just the way it is but if you want to add a few things, go right ahead. It is all personal preference.

    • Sprinkle with fresh parmesan cheese when serving
    • Stir in baby spinach leaves or kale just before serving
    • Omit the noodles altogether to cut down on carbs
    • Serve with a crusty bread or my air fryer garlic bread

    Ingredients
      

    • 1 pound Italian sausage hot (or combo of mild and hot), removed from casings
    • 1 cup diced sweet onion
    • 1 cup diced carrots
    • ½ cup diced celery
    • 2 cloves garlic minced
    • 14.5 ounce can diced tomato not-drained
    • 8 ounce canned tomato sauce
    • ½ cup sherry
    • 6 cup vegetable stock
    • 8 ounce egg noodles

    Instructions
     

    • In a large pot over medium/high heat add the sausage. Break up sausage pieces and cook until browned.
    • Add the onion, carrot and celery. Cook just until onion begins to soften 2-3 minutes. Add garlic and allow to cook 1 more minute.
    • Add sherry and let it cook down and reduce for 2 minutes.
    • Add tomatoes, tomato sauce and vegetable stock. Bring up to a boil. Add noodles (see notes) and then turn heat down to medium. Cook until noodles are tender, about 10 minutes. Serve while hot.

    Optional Garnish

    • Top with fresh grated parmesan cheese.
    • Sprinkle with chopped parsley or basil.

    Notes

    If not serving immediately, cook the noodles separately. The longer noodles sit in soup, the more liquid they will absorb and become mushy.
