    Banana Pancake Mix Muffins with chocolate chips

    Whenever I have a box of pancake mix in the pantry and a few ripe bananas sitting on the counter, these Banana Pancake Mix Muffins with Chocolate Chips are one of the first things I make.

    These yummy muffins have become a family favorite because they're incredibly easy to throw together, bake up soft and fluffy every time, and are packed with melty chocolate chips.

    I'm always looking for ways to use up overripe bananas before they end up in the trash. If I have zucchini from the garden too, I'll make my Zucchini Chocolate Chip Banana Bread since it uses up both ingredients in one delicious loaf.

No matter which recipe you choose, ripe bananas never go to waste around here!

    Chocolate chip muffins are great any time of year but my favorite time of year to make a batch of muffins is when school starts. Things get hectic during the morning rush and the kids can grab a muffin on the way out the door or I sometimes put a muffin in the lunchbox along with a yogurt and fruit and call it lunch. The kids love it!

    📋Ingredients

    The complete list of ingredients with measurements can be found in the printable recipe card at the bottom of this page.

    • Bananas - Ripe bananas that are turning brown. Bananas get sweeter when ripe.
    • Pancake Mix - Use your favorite brand.
    • Maple syrup - The real stuff is best but don't worry you can use the cheaper pancake syrups if needed.
    • Milk - I have only tested this with whole milk so that is what I'm suggesting.
    • Chocolate Chips - I prefer the mini ones in a recipe like this for a more even distribution of chips.

    1. Step 1: Mash some of the banana and roughly chop the rest. Set aside.

    1. Step 2: Whisk together the pancake mix, milk, egg, melted butter, maple syrup and the mashed banana.

    1. Step 3: Fold in (gently stir) chocolate chips and chopped banana.

    1. Step 4: Divide the batter into lined muffin tin. Fill each tin about ¾ full. Bake until golden in color and a toothpick inserted into center comes out without wet batter.

    Hint: Just before baking, add a few extra chocolate chips to the top.

    🔪Equipment

    Nothing too fancy needed to prepare these muffins. You'll need these basics:

    • Cutting board for chopping the bananas
    • Mixing bowl - I've been looking into getting these stainless steel mixing bowls that have a non-slip silicone bottom.
    • Muffin tin and muffin/cupcake liners

    If you don't have liners, you can just grease the muffin tin but I find it much easier to remove the muffins if they're in a paper or reusable silicone muffin liner.

    If you're in the market for a new muffin tin, I like this muffin tin that has silicone handles.

    🥣Storage

    Store the muffins in an airtight container for about 3 days or freeze for up to two months but they're best if consumed within one month.

    ❓FAQ

    How ripe should bananas be for banana muffins?

    Bananas should be ripe enough to have the skins at least slightly brown. The reason for this is that bananas get sweeter with ripening.

    Can I make banana muffins without the chocolate chips?

    Yes! You could swap some fresh berries in instead of chocolate chips!

    These banana pancake mix muffins with chocolate chips are soft, fluffy and easy to make. Ripe bananas, maple syrup and plenty of chocolate chips turn a box of pancake mix into delicious homemade muffins in less than 30 minutes.

    Ingredients
      

    • 3 cups pancake mix
    • 1 ½ cups milk
    • 1 large egg
    • 2 tablespoons melted unsalted butter cooled to room temperature
    • 2 tablespoons maple syrup
    • ½ cup mini chocolate chips plus extra for topping
    • 2 ripe brown bananas

    Instructions
     

    • Preheat the oven to 375°F and line a 12-cup muffin pan with paper liners. Spray with nonstick spray.
    • Mash one banana in a small bowl and roughly chop the other banana into small pieces.
    • In a large mixing bowl, whisk together the pancake mix, milk, egg, melted butter, maple syrup, and mashed banana until just combined. Try not to overmix; a few small lumps are fine.
    • Fold in the chocolate chips and chopped banana.
    • Divide the batter evenly between the muffin cups, filling each about ¾ full. Sprinkle a few extra chocolate chips or small banana pieces on top of each muffin if desired.
    • Bake for 16-18 minutes, or until the muffins are lightly golden and a toothpick inserted in the center comes out clean without wet batter.
    • Let the muffins cool in the pan for about 5 minutes, then transfer them to a wire rack. Serve warm with a drizzle of maple syrup if you like or room temperature.

    Notes

    Want to skip the chocolate chips? Try adding blueberries, raspberries and/or chopped strawberries. instead.
