    Jalapeno Popper Grilled Cheese

    This creamy, cheesy, tasty Jalapeno Popper Grilled Cheese is in my top 3 favorite grilled cheeses of all time. And trust, I've tested a lot of grilled cheese sandwiches!

     If you are a fan of creamy jalapeno poppers then you too will love this grilled sandwich.

    Easy to make and ready in under ten minutes. Perfect for lunch or dinner!

    Obviously, I love all things jalapeno popper. Some of my favorites have been this sandwich, obviously, but my others are my Air Fryer Jalapeno Poppers and Jalapeno Popper Rice .

    🔪Ingredients

    Only a handful of ingredients are needed for this easy recipe. I bet you have most of them on hand already. See printable recipe card for amounts and measurements.

    • Bread - You can use whatever kind of bread you like. Sometimes I use plain old white bread and other times I like a hearty grain type bread.
    • Cheese - Shredded cheddar, Mexican blend or Monterey Jack is what I use.
    • Butter - Melted. I've also been using the jarred ghee from Trader Joe's lately too in a pinch.
    • Cream cheese - Make sure you use softened cream cheese. I soften my cream cheese in the microwave.
    • Jalapeno peppers -You can use fresh or jarred. I suggest the fresh if you like a little crunch and the jarred if you don't.
    • Black pepper

     🍽️Instructions

    Combine cream cheese, shredded cheese, black pepper and jalapeno peppers in a bowl.

    Spread mixture on two slices of bread.

    Brush butter on the top of remaining slices and place them on top to create a sandwich.

    Place sandwich, buttered side down in a pre-heated skillet or grill pan. I actually really like making grilled cheeses on the blackstone grill in the summer months too.

    Flip sandwich once browned on the first side and then cook until filling is warm and melty and second side is golden brown.

     Serve immediately while still warm.

    Hint: Make sure to get melted butter on the entire slice so the whole bread gets evenly browned - unlike mine where I have a whole corner that I missed with the butter.

     🍳Variations

    Bacon - Bacon would be amazing in here. Crumble cooked bacon right into the cream cheese mixture.

    Cheese - freshly grated will always melt better than the bagged stuff so try out a block of cheese and grate it yourself.

    Seasoning - Garlic powder is a great addition.

    🍴Controlling the spice level (heat level)

    If you are using the jarred jalapenos then obviously you can buy whichever kind you prefer. Jarred jalapenos are typically labeled for heat level.

    If using fresh jalapenos, the best way to control the heat level is by the seeds. Scoop out most or all of the seeds if you don't want it spicy. If you want it a little spicy leave few seeds in there and if you are a brave soul, keep all the seeds - you've been warned it will be HOT!

    Ingredients
      

    • 4 slices bread your choice
    • 3 ounces cream cheese softened, room temperature
    • 2 tablespoon diced or sliced jalapenos *see note 1
    • ½ cup shredded cheese cheddar or mexican blend
    • ¼ teaspoon black pepper fresh cracked
    • 1 tablespoon melted butter

    Instructions
     

    • Preheat a skillet, grill pan or flat top grill on medium heat.
    • In a bowl stir together cream cheese, jalapenos, shredded cheese and black pepper. 
    • Spread mixture on two slices of bread and top each with remaining bread.  Brush melted butter on bottom and top slice of bread. 
    • Place sandwiches on heated pan or grill and cook 2-3 minutes per side until golden brown and cheese is warmed through.
    • Serve warm.

    Notes

    Note 1:   Jarred or fresh can be used. Fresh will be crunchier. Jarred will be softer.
    Which to use as far as heat:
    The jarred are typically labeled for heat level. If using fresh, the amount of seeds you use will control the heat level. The more seeds, the hotter it will be. If you want to remove the seeds, I find that slicing the jalapeno down the middle and then using a spoon to scoop out the seeds is the easiest method.
    Cheese choice:
    You can use whatever melting cheese you enjoy best. The options I have enjoyed the most have been a cheddar, cheddar blend with monterey jack cheese and also a pepper jack has been great.
